This dish is really a surprise because when family or friends eat it they really don’t know what is inside. The reason is you can add any of your veggies you have into this baked dish and it turns out yummy. You can even add noodles to enhance the dish!
Chicken can be substituted with beef or shrimp or all three can be added depending on your taste.
Ingredients
- 3/4 lbs of chicken tenders cut into small cubes.
- 3 cups of mixed vegetables, carrots, peas, potatoes, broccoli and green beans
- 3/4 cups of black eyed peas
- 1/2 cup green onions
- 1 cup bread crumbs
- 1 teaspoon red chilli flakes
- 1/2 teaspoon black pepper
- 1 teaspoon of siracha sauce
- 6 cups of water
- 1 cup shredded cheddar cheese
- 2 eggs beaten well
- 2 sliced tomatoes and cilantro for garnishing
For the sauce
- 2 cups of milk
- 1/4 cup heaped all purpose flour
- 4 tablespoons of butter
- 1 cup water
Method
- In a pan melt the butter
- Add the flour to the melted butter stir well on medium to low heat
- Stir constantly till the color changes slightly
- Add one cup of milk little at a time and mix well so that there are no lumps
- Add one more cup of milk and stir well for a couple of minutes
- Add a cup of water and stir till the sauce is nice and creamy
- If it is dry you add add more milk after that Keep aside
- In another pot boil the chicken and vegetables in 6 cups of water
- Add 3/4 tablespoon of ginger garlic paste
- 1/2 teaspoon salt
- Remove vegetables when half done and add it to the sauce
- When chicken is done add the chicken, the green onions, sirachasauce black pepper and the remaining stock and cook on medium heat till it thickens to a creamy consistency after that Turn off heat
- Take a 13x9x2 baking dish and grease with butter
- Pour the mixture and sprinkle the red chilli flakes
- Sprinkle bread crumbs to cover the entire dish
- Spread the beaten eggs to cover the dish
- Garnish with tomatoes, celery and cilantro and sprinkle cheese generously
- Preheat oven to 350 degrees and bake for 25 minutes till the egg is cooked
- Serve with garlic french bread or dinner rolls and enjoy!
