Chickpea Salad

This chickpea salad is vegan and protein packed. It is the simplest salad to put together by far. It is a great side dish that is healthy and can be made a day or two in advance. The chickpeas in the salad make it filling. You can add the veggies of your choice to make it healthier and wholesome. 

It is a great idea to add the dressing just before you serve the salad as the salt in the dressing will draw out the juices from the vegetables. 

This chickpea salad is a great idea to have on a hot summers day to cool you off. It is simple and easy to toss together. The main ingredients that I have used in this salad are chickpeas, tomatoes, cucumber and onions. You can add olives and feta cheese too. I skipped cheese since I didn’t have any at home and I wanted to try the vegan version of it. The dressing too is simple – made with honey, lemon juice, olive oil and oregano.

Ingredients
  

Salad

  • 1 15 oz can of washed and drained chick peas
  • 3 Roma tomatoes 2 chopped and 1 sliced for garnishing
  • OPTIONAL: You can use grape or cherry tomatoes
  • 2 Persian cucumbers
  • 1 white or red onion chopped save a few slices for garnishing
  • 1/4 cup fresh parsley
  • 1/4 cup chopped green onions

Dressings

  • 1/4 cup Extra virgin olive oil
  • 3 tbsp Lemon
  • 1/4 tbsp Black pepper 
  • 1 tbsp Salt 
  • 1/2 tbsp Oregano

Instructions
 

  • Take a serving bowl and mix together the chick peas and vegetables .Mix the ingredients for the dressing and pour over the salad just before serving.
  • Garnish with tomato, lemon and onion slices and enjoy a scrumptious salad!
