Pav Bhaji is one of the most popular street foods of Mumbai. Pav means bread roll and Bhaji means vegetables and since they are had together it gets its name Pav Bhaji. In Mumbai there are countless street vendors that sell Pav Bhaji and people flock by the enormous “tawa” ( large iron griddle) on which the Bhaji is made and the buttered bread is toasted.
Ingredients
- 4 medium sized potatoes
- 1 cup frozen peas
- 1 cup chopped cauliflower
- 3/4 cup chopped bell pepper
- Steam the vegetables and mash them
- 13/4 cups finely chopped onions
- 2 tablespoons of ginger garlic paste
- 2 cups finely chopped tomatoes
- 4 tablespoons of tomato sauce
- 1 teaspoon paprika
- 2 tablespoons cumin powder
- 1 teaspoon chaat masala
- 21/2 tablespoons of Shan Pav Bhaji masala (Available in Indian grocery stores)
- 4 tablespoons of butter
- 1/2 cup cilantro
- 1 cup water
- 1 teaspoon lemon juice
- Salt to taste
Method
- Take a pan, add to it butter
- When the butter melts add the onions
- Sauté on low to medium heat till the onions are transparent
- Add to it the chopped tomatoes and cook till the tomatoes are mushy.
- Then add the ginger garlic paste and sauté for a few minutes.
- Add the tomato sauce, paprika, cumin powder, chaat masala, Pav Bhaji masala and mix well
- Add the mashed vegetables and one cup water.
- Mix well and cook on low heat for 10 minutes.
- If it is too dry add a little more water
- Add cilantro lemon juice and salt to taste
- You can add more butter if you like
- In another pan cut the bread roll in the middle, apply butter and lightly toast it
- Serve it with the Bhaji and enjoy a delicious meal
