This fried rice is a an excellent side dish to compliment an entrée on a Chinese menu
Ingredients
- 2 cups boiled rice
- 1/2 cup frozen peas and carrots
- 1/4 cup chopped green onions
- 2 eggs beaten well
- 1 teaspoon minced garlic
- 2 tablespoons soy sauce
- 1 teaspoon vinegar
- 3 tablespoons oil
- Salt and pepper to taste
- 1 teaspoon siracha sauce (optional)
Method
- Heat up a wok
- When hot add the oil
- Add the minced garlic and fry for one minute
- Put in the vegetables and fry for 3-4 minutes
- Add to it the beaten eggs and scramble well with the vegetables
- Add the rice and mix well
- Add soy sauce little at a time and mix well
- Add siracha sauce , vinegar, salt and pepper to taste
- Mix well and lastly add the green onions and serve hot .
