Mutton Karahi is a traditional dish of Pakistan which is popular in both the rural and urban areas of the country. It is notable in North Indian cuisine too. It has a great significance at the festival of EID UL ADHA where this dish normally adorns the table. This dish is made in a Karahi (A heavy cast iron pan rounded like a wok with a flat bottom) It generally takes about an hour and fifteen minutes to prepare and cook. It can be stored for later consumption. It can be served with nan, paratha or rice. This dish is one of the hallmarks of Indian and Pakistani cuisine.
I generally cook it and serve it hot off the stove. I also save some for the next day as the flavors are richer and more complex. It is garnished with julienne ginger, green chilies and cilantro.
A Pakistani or an Indian cuisine menu card is usually incomplete without this scrumptious dish.
