Batata Vada (Potato Fritters)

Batata Vada is a popular Indian fast food and snack. Batata Vada literally means potato fritters. It consists of spiced mashed potato balls coated in chick pea flour batter, deep fried and served with coriander and mint chutney or any chutney of your choice  

Batata Vada can be had as Vada Pav which means you can have the fritter in Mumbai Pav ( soft bread roll ) like a sandwich with garlic chutney. As a teenager I remember visiting this Vada Pav  stall close to my house in Mumbai every day. It’s such an addicting snack according to me that I couldn’t resist it and had it every day as my evening snack  

Even today I make Batata Vada at least once a week. I bake the bread too …the whole nine yards

Batata Vada is a famous street food snack of India. They are spiced potato balls coated in gram flour batter and deep fried. They can be served with chutney or in a bread roll as a sandwich. It is a delicious recipe which goes best along with tea.

Ingredients
  

  • 250 gm of potatoes or 4 medium potatoes
  • 1 cup gram flour {Besan )
  • 2 cups water
  • 1 pinch baking soda
  • A handful of chopped cilantro
  • A sprig of curry leaves {Kadi Patta)
  • 1 tablespoon of ginger garlic paste
  • 1/4 teaspoon tumeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 2-3 pinches of asafoetida Hing
  • 1/2 teaspoon sugar
  • Salt to taste
  • 2 chopped green chilies
  • 1 tablespoon oil
  • 1 teaspoon lemon juice
  • Oil for frying

Instructions
 

  • Boil and mash potatoes coarsely  
  • Take a pan and heat 1 tablespoon oil 
  • Add curry leaves and fry  till they turn crisp 
  • Add the cumin-seeds, mustard seeds and green chilies Fry till it lets aroma
  • Add the potatoes, tumeric powder , ginger garlic paste salt to taste and sugar  
     
  • Add Cilantro
  • Mix well and cook on low heat for 2 minutes  
  • Add lemon juice and turn off heat  
  • Let the mixture cool and make small balls  
  • Put the potato balls on a plate
  • Take bowl add the gram flour , salt , pinch of baking soda and Hing (Aforetida) 
  • Add water to make the batter of a consistency that is not too thick nor too thin  
  • Make oil hot in a pan, dip the balls in the batter to cover them well and  fry the potato Vadas  Let them fry for a little before you turn them over  
  • Remove them on kitchen paper towel  
  • Serve with green chutney or ketchup or any other chutney of your choice
