Boil and mash potatoes coarsely
Take a pan and heat 1 tablespoon oil
Add curry leaves and fry till they turn crisp
Add the cumin-seeds, mustard seeds and green chilies Fry till it lets aroma
Add the potatoes, tumeric powder , ginger garlic paste salt to taste and sugar Add Cilantro
Mix well and cook on low heat for 2 minutes
Add lemon juice and turn off heat
Let the mixture cool and make small balls
Put the potato balls on a plate
Take bowl add the gram flour , salt , pinch of baking soda and Hing (Aforetida)
Add water to make the batter of a consistency that is not too thick nor too thin
Make oil hot in a pan, dip the balls in the batter to cover them well and fry the potato Vadas Let them fry for a little before you turn them over
Remove them on kitchen paper towel
Serve with green chutney or ketchup or any other chutney of your choice
