Blueberry Filled Coffee Cake

This coffee cake is made with fresh juicy blueberries  The cake smells wonderful as it bakes and fills the house with its aromatic splendor. The cake is dense yet very moist  and tasty and the cinnamon topping  adds the perfect crumble. 

This cake should surely go on your baking list. Its a sheer joy and perfect to add to a weekend breakfast or actually anytime is cake time. 

Blueberry filled Coffee Cake

This coffee cake is made with fresh juicy blueberries.  The cake smells wonderful as it bakes and fills the house with its aromatic splendor. Its a sheer joy and perfect to add to a weekend breakfast or actually anytime is cake time! Enjoy.

Ingredients
  

  • 1 1/2 cup all purpose flour
  • 1 tsp baking powder
  • 3/4 cup granulated sugar
  • 1/3 cup vegetable oil
  • 1 egg slightly beaten
  • 1/2 cup orange juice
  • 1 teaspoon vanilla extract

For the topping

  • 3/4 cup packed brown sugar
  • 3 tablespoons all purpose flour
  • 3 teaspoons ground cinnamon
  • 3 tablespoons vegetable oil
  • 1 cup fresh blueberries

Instructions
 

  • Preheat oven to 375 degrees
  • Coat a 8x8x2 baking pan with nonstick cooking spray
  • In a small bowl stir together flour and baking powder and set aside
  • In a medium bowl, using a wooden spoon beat together sugar oil and egg until combined
  • Stir in orange juice and vanilla until combined.
  • Stir in flour mixture.
  • For cinnamon topping, in a small bowl stir together brown sugar ,flour and cinnamon. Add oil, stir until mixture is crumbly set aside
  • Spread half the batter into baking pan
  • Sprinkle with half the blueberries and half the cinnamon topping.
  • Repeat layer
  • Bake 35-45 minutes or until a wooden toothpick inserted near the center comes out clean. Let cool on a wire rack
  • Serve lightly warm or at room temperature.
