Karahi originates in the Khyber Pakhtunkhwa region. Chicken Karahi  is one of the most popular curries out of Pakistan and India. It is an easy recipe and can be prepared quickly and easily. 

Karahi is named after a pan in which it was originally cooked a heavy often cast iron pan thick similar to a wok rounded and flattened base. Traditionally meat would be simmered  and stir fried in this Karahi on an open flame. It is quite a sight to see this dish be cooked in huge Karahis on the street, to hear the clanging sound, the speed and perfection of the spices added to the meat and the aroma  goodness gracious me!

The dish can take about 30-40 minutes to prepare and cook and the good part is that can be stored for later consumption. 

When you want  to cook a chicken dish this should be on top of your list and you will not regret it.

Chicken Karahi is a very delicious curry that can be prepared easily and quickly. Chicken, tomatoes and ginger are the main ingredients. Traditionally meat is simmered and stir fried in a Karahi. This dish can be made  from moderate to really spicy to suit your taste buds. Oil is used generously to give it the glittery look.It is garnished with julienne ginger,cilantro and peppers. It can be served with nan, roti or rice with onion and tomato salad on the side.

Ingredients
  

  • 1 pound cut up chicken breast You can also use a cut up chicken with bone in.
  • 4 big Roma tomatoes
  • 4-5 serrano peppers you can add more according to your spice level
  • 1 medium sized onion sliced
  • 3 tablespoons thinly sliced or crushed garlic
  • 3 tablespoons of julienne ginger
  • 1 cup yogurt
  • 1 tablespoon paprika
  • 1 tablespoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon black pepper
  • 1 tablespoon Shan Karahi chicken masala
  • 1 teaspoon red chili powder
  • 1 tablespoon Keora water
  • 6-7 tablespoons of oil you can add more if you like
  • Cilantro to garnish

Instructions
 

  • Take a Karachi and heat it on medium flame  
  • Add 6-7 tablespoons of oil  
  • Once the oil is hot add  the onions  
  • Add the peppers and fry till the onions are light golden brown  
  • Add the chicken  
  • Now throw in the tomatoes and turn heat on high and keep stirring well  
  • Once tomatoes soften remove the skin  
  • Mix in the dry spices 
  • Add to it the yogurt and mix well  
  • Cook for another 10 minutes  
  • Turn off heat add cilantro and Keora  water .
  • Serve with nan or Bombay Chota nan  and enjoy
