This recipe is one of those that can incorporate whatever you have in your fridge from meat to veggies. I made my peppers in a rather simple fashion to include mashed potatoes, lean ground beef and cheese simmered in a pot in a sweet and tangy tomato sauce.
You can use meat of your choice, rice, mushrooms and vegetables on hand. Stuffed peppers are very impressive not only to serve but they are very delicious and a complete meal.
