Grilled chicken with a creamy sauce and Mango salsa

This grilled dish is very simple requiring very few ingredients. The outcome is delicious and the chicken turns out moist and tender. I used chicken breast but you can use cut up chicken too. The main ingredients are cashews, yogurt, ginger and garlic. 
I made a sweet and tangy mango salsa to compliment the dish and hot fresh bread from the oven to complete the meal.

Ingredients
  

  • 1 cup cashews
  • 1 1/2 pounds chicken breast
  • 1 cup yogurt
  • 1 serrano pepper
  • 1 teaspoon cumin seeds
  • 25-30 tiny peppercorns. you can use less if you want.
  • 1 tablespoon each of ginger and garlic paste
  • 2 tablespoons butter or olive oil

Instructions
 

  • While the chicken is slightly frozen slice the breast
  • Grind all the ingredients in a blender
  • Marinate the chicken with the blended mixture and keep in fridge for an hour
  • Preheat the oven to 350 degrees F
  • Bake the chicken for 35 minutes
  • Serve it with mango salsa and bread or you can also serve it with steamed vegetables of your choice
