Moong Dal

Moong dal is a healthy comfort food  prepared from yellow split lentil. It is rich in lentil based protein and is a staple food in India and a main source of protein for vegetarians. Moong dal is one of the most favored dal or lentil in Indian cuisine as it is easy digestible.

Ingredients
  

  • 3 cups washed Moong dal it need not be soaked as it is a soft dal
  • 1 1/2 Roma tomatoes good size
  • 3 tablespoons of sliced or crushed garlic
  • 3 tablespoons of julienne ginger
  • 1 sliced jalapeno or serrano pepper whatever you have
  • 10-15 curry patta or leaves
  • 1 tablespoon paprika
  • 1 tablespoon cumin seeds
  • 1 1/2 tablespoons of cumin powder
  • 1/4 teaspoon turmeric powder
  • 3 tablespoons of vegetable oil or ghee
  • 2 cups water
  • Salt to taste
  • Cilantro to garnish

Instructions
 

  • Gather all ingredients
  • Take a heavy bottomed pot
  • Heat it and put 3 tablespoons of oil
  • When oil is hot add the curry leaves and let them crackle
  • Throw in the ginger, ginger, garlic and green chili and stir well till it lets out an aroma
  • Add the moong dal and mix well
  • Add the tomatoes and fold them in
  • To it add all the dry spices and stir well
  • Add two cups of water
  • Cover and cook for 25 minutes until dal is soft and the water is evaporated (15 minutes on medium heat and 10-12 on low to medium heat )
  • Moong dal is now ready!
