Szechuan Shrimp Fried Rice

This is a very popular & flavorful Indo Chinese rice dish that can be complimented with noodles, soup or another Indo Chinese entre (e.g. yummy Szechuan Chicken!).

Ingredients
  

  • 3/4 pound shrimp Marinate it with one teaspoon ginger garlic paste and one teaspoon of Szechwan sauce. Size of shrimp is optional
  • 3 tablespoons Szechuan sauce
  • 2 teaspoons heaped minced garlic
  • 1 teaspoon black pepper
  • 2 tablespoons soy sauce low sodium
  • 2 tablespoons Siracha sauce
  • 1 teaspoons chili garlic sauce
  • 1 tablespoons vinegar
  • 1/2 cup frozen vegetables you can add more if you like more vegetables
  • 2 cups boiled rice preferably cooked a day before
  • 2 eggs
  • 5 tablespoons oil
  • Salt to taste
  • 7-8 basil leaves
  • Cilantro half cup

Instructions
 

  • In a heated wok put 4 tablespoons of oil
  • When the oil is hot add the minced garlic
  • When it lets out an aroma add the shrimp and sauté
  • Continue for about 2-3 minutes on high heat till the shrimp curl up
  • Remove the shrimp in a plate
  • Now add another tablespoon of oil in the same wok
  • Add to it 2 beaten up eggs and scramble the eggs on high heat
  • Add the vegetables to the egg and mix well
  • Stir in black pepper mix add put in the boiled rice
  • Mix well and add the Szechuan sauce
  • Add the chili garlic sauce, soy sauce, siracha sauce, vinegar and mix everything well
  • Add salt to taste and fold in the shrimp
  • Add in the chopped cilantro and basil leaves
  • Mix and serve
  • Enjoy the delicious fried rice
